About Sjurstua på Rød
All our animals are grass-fed and graze in the same areas, but at different times. Each contributes in its own way to improving the pastures for the other animals. We want as few intermediaries as possible in our production and think that food should travel as short a distance as possible. The farm is certified organic through DEBIO (Norwegian organic certification body) and all our production is certified organic. All the animals graze on outlying land in the summer and otherwise live in a loose housing cowshed. The bees are also on autumn pasture on Rødfjellet, where they gather heather honey. We have a small self-service hut in front of the farmhouse where you can buy a selection of our products. For a larger purchase, please get in touch and we will arrange a time that suits! A LITTLE MORE ABOUT OUR PRODUCTS: SALSICCIA: Our salsiccia represents in a way our "madness", idealism and passion for food and food production seen in a wider context. A fascination with the local butcher in Simone's home village of Coazze led us to build our own production premises so that we could (among other things) make use of all the raw materials from our own production. In honour of Luciano (the butcher), the first salsiccia in history produced from our own mutton by us at Sjurstua has been given Luciano's name. The salsiccia is guaranteed not to be free of visual blemishes (sausage stuffing is not something we have always done), but it is guaranteed free of unnecessary additives and the whole process has been carried out by us. Under Luciano's guidance, of course. And NOFIMA's, too. We hope you like the taste! HAMBURGER: Here we have chosen to make a completely pure and simple hamburger. With a little salt and that's it. HONEY: All honey carries the flavour of the flora in the area where it was gathered. Ours is certified organic. The summer honey is a "cocktail" of flavour nuances as a result of varied flowering and good flying (foraging) weather for the bees throughout June. The honey is gathered from various apiaries near the farm. We do all the work of extracting, processing, bottling and labelling ourselves. In the period right after extraction we sell liquid (unstirred) honey as a fresh product. This will crystallise/set over time. This is a natural process and the honey can be warmed up (a water bath at low heat) to become liquid again. The heather honey has the characteristic heather flavour, but it is also sweetish and floral because, after the summer honey was harvested, the bees brought in more nectar from summer flowers before the heather flow began. MUTTON: Our sheep and lambs are grass-fed and certified organic. Old Norwegian breed. They spend the summer grazing on outlying land. BEEF: The meat is from young bulls/steers of the Tyrolean Grey and/or Western Norwegian Fjord Cattle breeds. We chose to go for animals of these breeds because they suit organic production well and are well adapted to grazing on outlying land, both in terms of body weight (not too large and heavy), mobility and food preferences ("omnivorous"). The cows too graze on outlying land during the summer months. SKINS/YARN: We sell skins and yarn from Old Norwegian sheep. Please get in touch if you are interested in buying from us!
