About Hyllest
From flower to drink Around Midsummer we harvest flowers in the early hours of the morning to get the flower with the highest content of aroma. We harvest flowers at Hørte and at Rinde Gård at Akkerhaugen, and on farms in Sauherad, Telemark. Production takes place at the local apple pressing plant Epleblomsten, where we let the aroma from the flower steep into a sugar/lemon syrup before it is filtered and bottled. We treat it gently so that the aroma is preserved in the best possible way. Hyllest is run by Mie Dahlmann Jensen, who has drawn inspiration and knowledge from her home country Denmark - and in collaboration with Rinde Gård and Epleblomsten - makes products that are sold in restaurants in Telemark and the Oslo area.
