Lensvik is known as «the strawberry village», and there has been a tradition of strawberry growing here for over a hundred years. We are the third generation to grow the sweet red berries on our farm at Sterten. We both grew up with berry growing on our respective home farms, and in the 80s we took over responsibility for production on the farm in Lensvika. In the summer we sell the berries at a self-service farm shop here on the farm, and if there are berries left over, we also drive to our own shop at the market square in Orkanger town centre. Even though the strawberry season lasts from June to October, the self-service hut is open all year. There you will find the products we make from the strawberries and from everything else that grows here on the farm (jelly, cordial, frozen berries and vegetables and our sparkling strawberry drink Jordbærtausa!) A few years ago, we tried out 'table-top' production under cover, in a small polytunnel, and quickly discovered that it led to a longer season, a better crop, less food waste, no need for chemical pesticides and much easier harvesting! Now we have finished putting up four new tunnels, and are in full production! We will never have 'learnt it all' when it comes to this, so it is just as exciting and challenging every season! 'Jordbærtausa' is also an exciting project that started in 2018 with us wanting to make better use of small berries, and reduce food waste. In season we make juice from these, and in collaboration with Røros Bryggeri og mineralvannfabrikk and the chef, Øystein Kvåle, we arrived at a fresh sparkling drink with a low sugar content (only 6% added). It really tastes of strawberries, and is reminiscent of childhood summers. Otherwise we think it is fun to use what grows in the kitchen garden, and in the forest, to try out new recipes for cordials, preserves, chutney and so on.
