About Aimees Farm

Aimees Farm is a small farm with grass-fed Scottish Highland cattle, Lofotlam and pigs kept outdoors. We rate grazing and outdoor living very highly, and in many ways this is a guiding star for how we run the farm. The meat we deliver is of very high eating quality; it is tender with good flavour and has a good fatty acid composition. The meat from outdoor pigs, and especially Hungarian mangalitsa, is darker in colour than the pork you usually find, and has a flavour all of its own. The lambs are well within the criteria for Lofotlam, a quality that speaks for itself. The sheep roam in sheer, steep mountains where the summer light never fades. When they are let out, there is often still snow in the mountains. The sheep graze their way upwards, and as the snow melts and new grass and herbs sprout, this grazing becomes the season's Lofotlam. Because the sea spray blows inland during the worst storms, the meat is also considered pre salè; salted by nature itself. With such a starting point, not much is needed to create unforgettable meals in the restaurant. We have organic potatoes and vegetables on the farm that often accompany the main ingredient, and we often go for unprocessed produce, clean and good flavours based on what grows in season or what we have preserved through the year. In our spacious lavvo (Sámi tent) we welcome both smaller and larger groups. Most important of all for us when you visit us for a fine meal is the story of the ingredients on the plate. We are happy to tell you about the local cheese dairies, about the honey producers we work with, or to give you the latest news from the farm.
